Summer Sides

These lovely summer evenings are allowing us to cook outside most days. It has become a pattern these last few week for one of us to pop out into the garden to light the barbecue or woodoven when we get home from work, so it's ready for us to cook a few hours later.

We use a mixture of charcoal and wood to cook with, this gives the food a lovely smoky flavour, so because of this I keep the preparation of the meats, fish, etc simple - just light marinades or sometimes just a little seasoning of salt and pepper.

So consequently I have time to make the side dishes a little fancier. Here are just a few of the dishes I've been making over the past few weeks just to give you a few ideas......


These stay crunchy on the outside but tender in the middle so they still have that satisfying crunch when you bite!


I made these a lot last year with my glut of courgettes - very quick and easy to make


Slaws - of any sort! this one was a creamy mustard


Beetroot is a favourite in our house and to have them served spicy and hot adds another dimension to them.

And finally a platter of steamed vegetables with a simple dipping sauce - this one was made with skyr as the base.
