Pepper Spiced Fruit Salad

A simple fresh fruit salad of peaches and strawberries can be given a little extra 'va-va-voom' with the addition of a quick spiciness - a black pepper and rum 'syrup'. Serve it with a really good pure white vanilla ice cream and it looks a million dollars - add a thin square of bitter dark chocolate and ladies and gentlemen you have a winner!!!

It's a very simple recipe ....

Cut and slice as many peaches and strawberries as you wish.

for the syrup
A measure or two of dark spiced rum
juice half a lime
dessert spoon maple syrup or a teaspoon soft brown sugar
dash vanilla essence
a few mint leaves
as many grinds of fresh black pepper as you wish - minimum 2 maximum 6!

Simply dissolve the sugar/maple syrup with the rum, add the lime juice and vanilla essence, stir in the black pepper and then pour over the fruit. Tear the mint leaves and add to the salad. Cover and chill for at least 30 minutes - longer if you can. Remove from the fridge 15 minutes before serving.
