Lime Cheese Cream

A quick, easy and sweet cream cheese mix is one of those recipes every busy cook needs to know - it's saved my bacon so many time!!!

This recipe I concocted years ago for a birthday cake frosting, but since then it has served me well in any number of ways including as a no-cook cheesecake topping, a sweet filling for pancakes, and a pipped cream for cup cakes, I've served it with fruit salads, sweet pastry dishes ..etc ...etc .....etc ......... well just about any sweet dish really.

What I love about it is it's not too sweet, the cream cheese adds a tartness and I only include a tiny amount of sugar so it perfect for me and my not-too-sweet-tooth!

100g cream cheese - full fat! sorry but only full fat works here.....
150ml double cream
2 teaspoons caster sugar
zest of a lime
dash vanilla essence

Simple place the cream cheese, the cream and the sugar into your mixer and whisk. I use a big balloon whisk to get loads of air in to make it as light as possible. Whisk until you achieve your desired thickness - keep it soft peaks if your serving as a side to a fruit salad or pie, thicker if you using to pipe with or for a filling.

Once you have your desired thickness fold in the lime zest and vanilla essence.

And Voila you have it made!

It also act as a great base for other flavours, you can add orange instead of the lime zest, or include a dash of rum or liquor of your choice. You can add a mixture of chopped glace fruits to fill cakes or macaroons, fold in fresh fruit - the options are endless.
