Jalapeño Dipping Oil


For me along with this hot sunny weather comes a loss of appetite, so a full cooked meal each evening is not whats required. However, sitting out in the garden after work, with a long cool drink and a variety of small plates is a lovely way to enjoy the evening air, cooler temperature and just generally chilling out, chatting and relaxing.

One part of this style of eating I always love is ripping up fresh pitta or crusty bread to dip in oils and vinegars. I will often just place a bottle of good olive or avocado oil on the table, along with a thick flavoured balsamic vinegar - such as O & Co's fig Balsamic - just so we can pour a little of each on our plates and then mop up with the bread. It's a very social way to eat.

A few weeks ago I wanted to elaborate on that and made up a oil based dip of jalapeño and coriander - it hit all the right taste spots for me and now I have become addicted. It's so simple to make - especially if you use a mini mixer - and it's actually very good for you too - so bonus!!

Recipe - enough 4

150ml good extra virgin olive oil
2 red jalapeño chilli - green or another of your favourite chillies will be fine
handful chopped fresh coriander leaf - as much or as little as you like
juice 2 limes
3 spring onion
salt to taste



If your going to make this by hand simply cut, chop and slice everything as finely as you can. Place in a bowl and pour over the oil along with the lime juice. Season with the salt to your liking, cover and then chill before serving.

Alternatively just throw all the ingredients into your mini food processor, whizz, chill and serve!

See - I told you it was easy! Which is perfect when the weather is hot. You can vary the quantities to your taste - more or less chilli, add a different herb, throw in extras like olives or tomatoes - just go with it and see what happens!

I'm always looking for simple fresh pasta sauces and this dip makes a great one. Simply pour over hot pasta and serve with a little Parmesan - I had it last week over a plate of pappardelle and it was perfect with a few tiny black olives thrown over for good measure!
