Rocky Road - that's only for the Grown ups!

Rocky Road has got to be one of the easiest treats to make loved by kids and adults alike but, and it is only a little but - although after eating to much of this it may become a big butt!!! ......

I digress......the little but is that I find too much a bit too sweet and sickly, which is something we all (well most) come to eventually as adults. So I've made a few adjustments - honey instead of treacle, I used dark chocolate with a high coco solid so it's less sweet as well as being a little bitter, and finally I added some chilli flakes just to make it pack a bit of punch.

Recipe - makes approx 28 bites

200g dark choc - at least 70% cocoa
2 tablespoons runny honey
130g butter
200g digestive biscuits - crushed into large chunks
pinch salt
2 teaspoons chilli flakes
100g mini marshmallow
50g dried cranberries
50g pistachio nuts
50g sultanas
74g maltesers - that's 2 packets!
1 tablespoon coco flakes - optional
a dusting of icing sugar

Melt together the chocolate, honey and butter until you have a thick silky syrup. Remove from the heat and gently fold in the salt, chilli flakes, biscuits, dried fruit and nuts. Once it's cooled a bit add the marshmallow and maltesers - if you add these to too hot a mixture they will melt!

Make sure everything is coated in chocolate and the turn out onto a lined backing sheet and spread out evenly to the edges. Sprinkle coco flakes over the surface and then pop in the fridge for at least two hours to set.

Remove from the fridge, dust with icing sugar and cut into squares.

Store in an airtight container in the fridge and it will keep for about a week - if you can hide it that long!
