Lambs Lettuce and Orange Salad


Hi - I'm back! I hope you all had a great Easter break, enjoyed the spring sunshine and generally feel refreshed and happy.

We had a relaxing time and I decided to have a proper break from everything - including any blogging stuff, so that's why I've been a 'slow poster' these last few weeks. However, here I am now full of energy and with a whole load of new posts, recipes and ideas I'm looking forward to sharing with you.

Today I've a simple salad recipe that's great to make as a starter to help cleanse and prime the palette ready for a rich main course such as duck or game. It gets it flavours from a zingy dressing but also by marinating some of the ingredients before assembling the salad..........here's the recipe......... it's very easy - makes for an impressive and pretty salad.

Recipe - enough for 4

1 packet lambs lettuce - approx 100g
1 red onion
1 red pepper
3 easy peel tangerines
handful flat leaf parsley

For the dressing
1 tablespoon orange juice
3 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
salt and freshly ground black pepper




First off make up the dressing. Place all the ingredients into a large mixing bowl and whisk until all have combined. Set aside whilst you prepare the rest.




Peel the tangerines, remove any little bits of white pith and with a sharp knife, cut into thick slices. Peel and thinly slice the onion, dice the red pepper and roughly tear the parsley. Place all in with the dressing and gently fold to coat everything. Cover and set aside for about 20 minutes.




Whilst that's marinating away, remove the lettuce from the packet and wash. Lambs lettuce often has pits of soil and grit attached to the tiny roots so it's worth checking though and picking it off. Wash with icy cold water and if you can, spin off as much water as possible.




When you ready you can assemble your salad. Place the lettuce in the bowl with the dressing and the other marinating ingredients and gently fold - I find it's best to use your hands so you don't bruise or break the leaves. Once everything is coated divide amongst individual salad bowls and serve straight away.
