Parsley,Pasta and Parmesan

Here's a very simple, quick, healthy supper. I first put together this recipe a few weeks ago, when I was looking for something easy but tasty and healthy for my evening meal. I'd just bought a big bunch of flat leaf parsley home and it was all sat in a jug on my kitchen island in lieu of flowers, so I wanted to use some of that - but that's as far as my supper plans had got.

So, as is usual in this case, I wandered to the pantry and gathered up a few things that took my fancy. I ended up with some pasta, a head of garlic, a lemon and a new block of fresh parmesan. It turned out to be a great combination and I have made it a number of times since then. I tweak the recipe to suit my mood, so far I've added chilli, marinated artichoke hearts and sun dried tomatoes - I'm sure more ideas will come in time to form a family favourite. But for now here's my basis recipe.......

You can adjust this recipe to suit numbers I've not really measured my quantities but this is what I do for one!

Large handful parsley - stems and all
1 fat clove of garlic
juice ½ lemon
A good extra virgin olive oil
Approx 2 level tablespoons grated parmesan
salt and pepper

Pasta cooked to packet guidelines - I used casareccia

Pop your water on to boil for the pasta and then you can make your sauce.

Chop your parsley and garlic together - either with a quick whizz in a food processor or by hand - either works - your time and mood can dictate.

Place them in a bowl, along with the grated parmesan and add a good amount of oil. I added approx three tablespoons - but it's up to you.

Stir to combine it all into a paste and then squeeze in the lemon juice and finish with a good pinch of salt and freshly ground black pepper.

Set aside and get the pasta cooking in the boiling water.

When your pasta is cooked, drain and stir in the parsley paste. Taste and adjust your seasoning. If your looking for something richer, a little butter or cream can be added along with the paste.

Serve in warmed serving bowls with a little more parmesan to grate over the top.

Any addition you wish to include, be it sauteed mushrooms, crispy bacon, sliced of tomato etc can be added after the pasta has been coated with the parsley paste or sprinkled over the pasta after it has been placed in the serving bowls.
