Oven Baked Doughnuts

You no longer need to faff around with hot oil, yeast, kneading, raising time etc etc, to make up a batch of ring doughnuts. All you need now is get yourself a doughnut tray, make up a mixture similar to a cake mix and bake them in the oven. You can make up a batch within half an hour easily!

Perfect for someone like me - for when that craving strikes!and waiting to long it sometimes very difficult!!

Recipe - for a tray of 6

75g plain flour
half teaspoon baking powder
pinch salt
50g caster sugar
60ml milk
1 egg
10g melted butter
half teaspoon vanilla extract

Topping of your choice - dusting icing sugar, flavoured icing, melted chocolate .........

Preheat the oven to 160C/gas3

Brush the doughnut pan with a little cooking oil or melted butter - you can buy a doughnut tray in most cook shops or have a look on amazon.

Sift the flour into a large bowl, along with the baking powder and salt. Add the sugar and combine.

In a separate bowl or jug, mix together the milk, egg, melted butter and vanilla. When all whisked thoroughly, add to the dry ingredients and combine to form a batter like cake mix.

Spoon into the doughnut rounds. Place into the oven and bake for 8-10 minutes or until firm and springy to the touch.

Allow to cool a little before dusting with icing sugar.

I you want to fancy them up a bit with a topping or coat with chocolate or maybe a flavoured icing leave until they are completely cool. These I coated in a simple lime glaze - just icing sugar dissolved in lime juice with a little lime zest to add some colour.
