Pan Fried New Potatoes with Sage


Wondering about what to do with that bowl of left over new potatoes sitting in your fridge?

Well look no further these spicy, crispy bombs of flavour are so good you'll want to have leftover potatoes more often. In fact you might do as I do and cook extra just so you can have leftover new potatoes sitting in your fridge!

I had said bowl of leftovers sat in the fridge earlier this week, I didn't want to just reheat them - that's always so disappointing, new potatoes seem to look slightly gray when reheated in the microwave and the flavour is watery - just plain yucky really! No amount of butter will resurrect them.....

So a quick mix with a few flavours and oil, gave them a fry in a hot pan and 'voila' - just the perfect mid-week side dish!


Recipe - serves 4

The equivalent of 9 or 10 whole cooked new potatoes
half teaspoon chopped dried sage
large pinch chilli flakes
1 fat clove garlic - crushed
salt and pepper
olive oil to cook

Simply take your new potatoes and cut them into halves and quarters - a mix of sizes is great as some will crisp up more than others so you get good crunchy bits - then taking the flat of your knife, your hand or a wooden spoon, crush down lightly on each potato to squish them a bit. This give more area to crisp up!

Place the potatoes in a bowl and add the chilli, sage, garlic and a little olive oil. Using your hand mix all together so every bit of potato has oil and flavours rubbed in.

Heat a heavy based pan over a medium to high heat, add some more olive oil and when its hot, tip in the potatoes. Give the pan a shake for an even distribution and let them cook away. Keep an eye on them and turn/shake the pan often. Cook until all sides are crispy, crunchy and perfect.

Season with salt and pepper before serving.

A squeeze of lemon juice or a grating of orange zest are a great addition - just add when your mixing in the spices at the start.
