Cinnamon Apples


It's been a good year for apples - too good a year! we've been giving them away to all and sundry - and still have loads, so I'm constantly trying to find various ways of using them up. I'm planning on having a go at making a type of apple ketchup but want/need to use the bramley apples for that and those are still hanging on the tree! So I will need to wait a few more weeks.

In the mean time there are still plenty of other varieties - so currently I'm stewing and poaching the last of the eaters to have as simple weekday puddings, usually served with ice cream. My latest thing is to just peel, core and slice about 6 to 8 apples, dust them with a couple of tablespoon of soft brown sugar and a heaped teaspoon of cinnamon.

I then heat up a big knob of butter in a pan and gently fry the apples until they have softened and the sugar has started to caramelise within the butter. When you ready to serve, simply spoon into bowls, or over pancakes (or even on a slice of spicy ginger cake - which works really well!!!) and serve with pouring cream or ice cream.

Sometimes the simplest dishes are the best.........
