Basil and Parmesan Dip



Basil and parmesan are the perfect combination, an absolute classic in fact,  throw in a handful of pine nuts and you would be thinking that I'm well on the way to making pesto. However, just varying the ratio of ingredients, adding some sour cream, a little cream cheese and it makes an amazing freshly flavoured dip.

This dips is so easy to make, as long as you have all the ingredients to hand you can prepare it in just a few moments. Vary the quantities to adjust the flavour and texture if you wish  - depending on your mood you can add more lime for a fresher flavour, reduce the basil, add less cream cheese but more yogurt, leave out the garlic, add more pine nuts - I've done all that and the flavour is still good. It's a very forgiving dip so try a little after blitzing and add a bit more of whatever you wish to adjust to your tastes that day.


Recipe - enough for a large bowlful

1 really large handful fresh basil leaves - I have no idea of weigh -sorry!
1 tablespoon pine nuts
1 tablespoon grated parmesan
1 clove garlic
juice of a lime
3 tablespoons sour cream - half fat if you wish
1 tablespoons cream cheese - low fat if you wish
1 tablespoon natural yogurt - optional, I just like the extra sour note it brings
salt and pepper




Place everything into the processor. Give it all a good blitz and your done. Taste and thin with a little natural yogurt or cold water if needed.



Serve with chips, pitta, bread, veg - whatever you want to dip!

It's also good as a sauce with smoked salmon or a little stirred through hot, boiled new potatoes.
