A Nutty Blackberry and Apple Crumble



My crumble combination came to me whilst I was picking the last of the blackberries in the garden last week.

We have allowed this particular blackberry bush to grow through one of our apple trees - more by neglect than design originally, but it seemed rather apt as this apple tree has excellent fruit for cooking. It has eating apples that are a rather sharp taste, crisp in texture but keep their shape when cooked - so they are perfect for pies and crumbles.

Anyway, whilst picking said blackberries, I noticed that the hazel trees had lots of nuts this year - so my thinking went ............... mmmmmm ............... blackberries, apples, hazelnuts ..... this would all work together for a perfect autumnal crumble.

So I gave it a go .......

Recipe - enough for 4

300g apples - cored and sliced
120g blackberries - picked over and washed
30g white granulated sugar
75g hazelnuts - crushed slightly

for the crumble
100g plain flour
60g caster sugar
60g butter
20g ground almonds

Pre-heat oven 190C/Gas 5




Place your prepared fruit and nuts in a large bowl. Add the sugar and, using you hands. make sure all the fruit gets a coating of sugar.




Place your sugared fruits and nuts into a pie dish. Cover with foil and place in the oven for 10-15 minutes for the fruit to start to cook.




Whilst the fruit is cooking you can prepare the crumble topping. Tip the flour, sugar and almonds into a large bowl and cut in the butter. Rub the butter into the flour with your fingertips to form large breadcrumbs.




Remove the fruit from the oven and pile the crumble mixture over the top. I like to pile it up in the centre and keep it sparse around the edges so the sweet juices can bubble up during cooking and make a stick sweet treat around the edge.

Place it back into the oven for a further 15-20 minutes, until the crumble topping is a golden brown.




Leave to cool for a few minutes before serving. I like to serve with big scoops of vanilla ice cream - I love the hot and cold combination!
