Cajun Fried Chicken Burger

 Good Morning!

Last night I needed a burger, I really, really, really needed a burger! Do you know that feeling? I've been on a healthy eating kick for just a few days, exercise, no alcohol, lots of water and fruit teas - I think my body just rebelled! All I could think about was having a beer and a burger! So in an attempt to stop my stomach from strangling me if I served up another plate of salad, I came up with something a little more healthy than a good old cheese burger to satisfy my cravings.

And I put it all in a bun to make it look and feel like a burger so I - and my stomach - was happy!

Recipe - enough for 2 burgers

1 large chicken breast or 85g leftover cooked chicken
1 yellow pepper - shredded
1 onion - thinly sliced
3 teaspoons cajun spice mix - I like mine hot and spicy if you want a little less go with 2 teaspoons
1 fat clove garlic - crushed
2 teaspoons tomato paste
juice lime

to serve
Green salad leaves
Lime slaw
Brioche buns

OK lets start with the chicken. If your going with a fresh uncooked chicken breast you will need to cook it before shredding. Place the chicken breast into a small pan and cover with water. Bring to the boil and cook for 8-10 minutes until it's cooked through. Remove from the pan and pat dry. Once its cool enough to handle grab 2 forks and shred the chicken up.

If your going with the leftover chicken just remove any skin and pull it into shreds.

Mix the tomato paste, garlic, spices and lime juice into a smooth paste.

Now grab a pan and add about a tablespoon olive oil. Heat and then gently fry the onion and pepper slices until they sat to soften. Add the chicken and fry together for a few more minutes. Spoon on the spice paste and keep everything moving and gets coated. Keep cooking away and allow the chicken to catch slightly - this makes the flavours way better!

You should end up with some resembling this!

Now you can assemble your burger.....

Slice your bun in half and layer on the coleslaw and salad.

Add the fried chicken and top off with sliced gherkins and the bun lid.

And add a stick if you want to feel fancy! I do it to stop the top falling off as a land on the sofa in front of the telly - ready to tuck in!

So that's my version of a healthy burger.....

I did manage to avoid the beer and grabbed a bottle of water instead so I still feel proud that I didn't fall to far from my healthy eating plan!
