A Simple Lunch


Sometimes a simple lunch is all you need and these meals can often be the most memorable, tasty and happy. A simple fare shared with good company, a bottle of wine and a beautiful view is something very special.

Some of my favourite memories are of meals we have 'grabbed on the go' - a simple, but beautifully made, salmon quiche purchased in the fish market at Quimper in Brittany, and eaten sat on a bench by the river; A meal of cheese and greengages consumed walking along the hot sands on St Martins beach in the Isles of Scilly; One of olives, tomatoes and bread purchased in Penzance, eaten on the Cornish coast overlooking St Michael's Mount ........ and just last week a freshly made pizza bought at the university cafe in Bath and eaten sat in the car, parked at the top of a hill over looking the canal boats moored at Bradford on Avon .......... none of these meals were expensive, we didn't have to dress up, they were not planned or booked weeks in advance but they were all more memorable and special than those.

Yesterdays meal was just one example, I was on my own, it was lunch time I could just have had a quick sandwich in front of the news with my computer open - still working away - but I thought 'no' take a proper break for lunch - so a bowl of chopped fresh tomatoes dressed with a little olive oil, basil and salt served with crumbly goats cheese and slices of soda bread. I poured a glass of sparkling water and took my meal out into the sunshine - the birds were singing, bees buzzed and everything seemed to slow down to take life easy whilst I enjoyed my lunch.....

...... so what I'm trying to say is, meals can be easy, simple and stress free and still be perfect, memorable and pure pleasure.....

Although I will say that impromptu picnics are always improved with the trusty Swiss army knife to open bottles, to cut breads and divide up cheeses .....
