Watermelon Salad

With large wedges of juicy sweet watermelon this is one salad for eating al fresco on a hot lazy day. It's perfect with a barbecue and although it doesn't seem like the obvious pairing watermelon and feta work really well together. I like to add onions - either thin slices of red onion or loads of chopped spring onions - to give the dish some bite and the balsamic vinegar dressing brings it all together.

Recipe - enough for 4

750g watermelon
280g feta
a large handful or two of rocket leaves
4 spring onions or 1 red onion
handful of olives

for the dressing
1 tablespoon balsamic vinegar
1 tablespoons olive oil
1 clove garlic - crushed
1 teaspoon dijon mustard
1 teaspoon runny honey
salt & pepper

First remove the rind from the watermelon and cut into wedges. Remove any obvious seeds if you wish, place wedges in a bowl, cover and pop into the fridge for at least an hour to chill right down.

Whilst the melon is chillin' you can prepare the rest of the ingredients. Chop or break the feta into bite size chunks; either thinly slice a red onion or chop up the spring onions; wash and spin the rocket and prepare your dressing - just put a the dressing ingredients into a screw top jar and shake well.

Just before your want the salad spread the melon wedges over a large platter, arrange the salad, onions and feta over the wedges, scatter on a few olives and then dress with the balsamic oil.

Serve straight away whilst the watermelon is still cool and refreshing.
