S'mores Bars


These amazing things are a cross between rocky road and s'mores - but without the burnt bits. They are soft and gooey, loaded with goodies and they certainly hit any sugar cravings you might have. In fact they don't just hit them, these bars will knock them out the park!

If your looking for healthy today you will need to look elsewhere, but frankly if we're going to go for a sticky sweet treat then lets do it right! No half measures here - but I have included dried fruit and nuts - so if you want to think there is something good for you in these treats focus on to that part!

Recipe - make approx 14 bars

200g Nestle white crunch bars - or any white chocolate
3 tablespoons golden syrup
130g butter
200g digestive biscuits
pinch salt
2 teaspoons vanilla essence
100g mini marshmallows
100g pecan nuts
100g dried cranberries
2 big handfuls sweet n' salty popcorn

Large baking sheet lined with non-stick paper or silicon sheet


Break the chocolate into chunks and place in a large pan along with the butter, syrup and vanilla. Place over a medium to low heat and stir gently until all has melted into a thick chocolate syrup. Once melted add your pinch of salt.


Whilst you chocolate mixture is melting, break up the biscuits into bits. Give them a good bash with a rolling pin so you get a mixture of fine dust and largish lumps. Place in a bowl along with the marshmallow, pecan nuts and cranberries.


Allow you white chocolate syrup to cool a little (the blobs in this mix are the 'crunch' from the Nestle chocolate bars) If it's too hot the marshmallow will melt away to nothing but you need it to be still warm enough to make them melt a little.


Pour the mixture into the bowl of dry ingredients and quickly mix together so everything is combined.


The marshmallows should go gooey and sticky.


Once everything is coated, pour the uninspiring mess onto a lined baking sheet and spread out to approx cm thick.

Sprinkle the popcorn over the top and lightly press down to stick them to the top. Cover with cling film, place in the fridge and leave for at least 2 hours - over night is best - before cutting into bars.



They will store in an airtight container for about a week or so. But if your house is hot they can melt a bit so place in the fridge if need be.
