A simple pre-cooked lobster supper

This post should have been entitled 'What to do when your husband brings home pre-cooked lobsters when you though he was going to get raw tiger prawns!'

First off  - you don't shout 'that's a darn big prawn!'

Second - you don't follow that up by riffling through the bag looking for those expected raw tiger prawns..........whilst trying to ignore the lobsters who seem to be staring at you!

And thirdly - you don't then throw your hands in the air and ask 'well, now what do you want me to cook for supper because that (pointing at the poor lobster) isn't going to work with my recipe'

I didn't really do that .................... honest ..................... I'm not that much of a kitchen diva ...................... am I?

What you do is ....... you re-adjust your thinking, open a bottle of white wine and make a few simple side dishes that will go with a lobster supper.......

First we had a simple dip made with a yogurt and mayonnaise base and flavoured with lime, capers and parsley. Perfect for dipping claw and leg meat.

And the meat from the body I pulled into bite size pieces and used to fill fluffy white rolls along with a few salad leaves and then poured over a hot citrus butter sauce.

So in the end, whilst sat in the garden drinking white wine and cracking lobster claws, I was forced to admit that the lobsters were a good idea, they did look very photogenic for a blog post and they tasted darn good.......

Have a great weekend
