Cajun Spice Mix


I've got into the habit of making up my own herb and spice mixes. A few months ago I found I'd run out of  a herb seasoning I liked and on looking at the label I found that I had most of the individual dried herbs and spices already in the cupboard!c So it seemed like a good idea to have a go and make up my own! Ok, I do make up spice mixes for individual meals but when your busy and for those quick midweek suppers it's good to be able to grab just a jar of seasoning to sprinkle on and add a little something more to that chop or bit of chicken!

So, since then I have made up numerous mixes - a mixed spice for cakes, herb de provence, Italian seasoning, chilli, curries and Cajun. Not only do I get to choose the dominant flavours but I also know what's going into them. A lot of commercial mixes, especially spiced ones, have added sugars and salts which, frankly, you don't need - especially if you add more salt to your meal.

So today I thought I'd share my Cajun mix (I will probably share some of the others as I make them up over the next few months)

Recipe - makes about 4 tablespoons

2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons chilli flakes
2 teaspoons oregano
1 teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
pinch of salt

Simply grab a teaspoon and mix all together! Store in a dry, airtight container, out of the light and use as desired.
