Cajun Chicken

You can really spice up you midweek meals with this dish - as per usual it's quick and easy to cook and you can choose how you want to cook it - it can be as whole chicken breasts done on the barbecue, under the grill, in the oven or on the hob - you could cut the chicken into chunks and turn them into kebabs or just slice the chicken up and quick dry-fry in a pan - as I did.......

Once you've got your spice mix your good to go and served with a bowl of rice and maybe a simple salad - it's a balanced meal, healthy, satisfying and very tasty.

Recipe - enough for two

2 large chicken breasts
3 teaspoons of Cajun spice mix eith use my mix or a shop bought one will be fine
juice two limes
2 clove garlic - crushed

You can adjust the amount of spice you want for this dish. I like mine strong, hot and spicey ....... no I'm not going to say 'like my men' that would be crass! ........ and that is not the sort of image i'm trying to present ........    although having said that ............     anyway, back to spice mixes - I add quite a lot but a teaspoon will be fine, if your not so keen on too much spice.

Prepare your chicken how you want - if leaving whole breast, just cut a few slices along the top so you can really get the spicy flavours into the meat.

Place the chicken in a bowl and rub in the spices, garlic and the lime juice.

Throw the lime shells into the bowl as well, cover and leave, in the fridge, for as long as possible before cooking - 2 hours would be perfect, 20 minutes is fine and 10 minutes will work as well......

Once your ready to cook you can either grill, barbecue or oven (180C) until your chicken is cooked through but not dry. If you are going to cook in the oven then use a little olive oil to stop the chicken drying in the heat.

If you are going to dry-fry. Heat a large non-stick pan over a high heat and then place your chicken on. Keep shaking the pan and cook for a few minutes until the spices start to catch and burn. Turn the chicken over and do the same again.

Once the chicken is just cooked through but still juicy and succulent it's ready to serve.

Place on a bowl of rice and serve with a green salad.
