Paprika Chicken with Spinach


As per usual, with most of my mid-week cooking, recipes have to be very quick, tasty, and healthy. I try to eat a healthy diet during the week and then on the weekend I let is slip a bit (or a lot .....) This week I've been on a spinach kick - more by accident than design - I bought a big bag of baby spinach leaves and blimey-crikey-o'reilly, there was a lot of leaves!!! So never one to waste food I've been cooking and munching on spinach all week. I'll be like Popeye by the weekend!

Mostly I've been making salads with the leaves or adding a handful to any sauce I'm making, but last night I decided to make it a main part of the dish. It's a very (very) simple recipe but it's really tasty and I shouldn't be surprised to find myself making it again, and again!

Recipe - Enough for 2

2 large chicken breast - or 4 thighs
2 teaspoons paprika - mild, hot, sweet - whatever you wish
1 tablespoon olive oil
A little butter - about half a tablespoon
2 great big handfuls of baby spinach leaves - I didn't weigh them just use your gut.....
Juice half a lemon - optional
salt and pepper




Slice the chicken into large bite size pieces. Place in a bowl and sprinkle on the paprika. Rub the paprika into the chicken to coat both sides.




Add the olive oil and butter to a large pan and place over a medium heat. Once the butter has melted and started to foam, add the chicken and fry on both sides until it starts to colour and cook through.




Whilst the chicken is cooking, rinse the spinach and spin off most of the water - I use my salad spinner to do this but a few good shakes in a colander will do the trick.




Once your chicken is just cooked through, add the spinach and shake the pan to get the leaves coated in all the lovely spicy juices and oils. Keep the pan on the heat and the leaves will wilt right down in just a few minutes.




Season with salt and pepper along with a little squeeze of lemon juice if you wish.

Serve with a little rice or potatoes.
