Orange and Coriander Seared Steak


I was musing about how I would like to cook my steak for supper last night when my eyes alighted on the left over tangerines from my salad earlier this week - mmmmm - steak and orange would be a good combo and with a few coriander leaves it could be excellent - and it was! - and it is so easy - I'm not sure that it's right that something so easy to make should taste so good!

I decided to sear the steak on a very hot griddle and make up an orange and coriander sauce loosely based on a chimichurri sauce (chimichurri always makes me think of the chimney sweeps in Mary Poppins - you know chim chimmery etc - I'm going to be singing that all day now!)

Recipe - enough sauce for 2

1 big handful of coriander leaves
1 green chilli - de-seeded if you want less heat
1 fat clove of garlic - peeled
a small handful of cherry tomatoes
2 spring onions
juice of 2 tangerines
a little olive oil
salt and pepper

2 rump steaks
2 more tangerines


First get your griddle heating up. You want it smoking hot before you cook your steaks.

Whilst it's heating up you have time to make up the sauce. Grab a mini food processor and throw all the ingredients in and then just whizz it up. Check for seasoning - I like to add loads of black pepper - and your done! See I told you it was easy!


The sauce is happy to sit for a while so don't cook your steaks until the griddle is really good and hot.

Sear the steaks quickly on both sides - just a couple of minutes is all you need - when it's nearly finished cooking squeeze over the juice of the tangerines. Remove from the griddle and leave it to rest before slicing.

Place the steak on to individual serving platters and spoon over the sauce. Serve with a green salad or chips - or both!
