Orange and Avocado Salad

I think you'll all agree, from the above picture, that this is a very pretty salad - well, if you like avocado and orange that is! - you might hate avocado and orange - so if you do this recipe isn't for you - but if you do like avocado and orange then keep reading!

Wow - what am I on this morning? a bit of a waffle intro - I'm blaming the fact I've been off work since Easter, I've had a bug and I'm still taking the tablets!

So this recipe it really just a simple salad with a zesty vinaigrette, loads of flavour and looks good - it's packed with vitamins and good stuff so is excellent, if your feeling like I am at the moment, for fighting off bugs and colds.

Recipe - enough for 2

1 large ripe avocado
3 tangerines
bag of mixed baby salad leaves - try to get a mix of colours and leaf shapes
punnet of mustard sprouts

And for the vinaigrette

juice of a tangerine
1 tablespoon
1 teaspoon whole grain mustard
a crushed clove garlic
1 teaspoon honey
1 teaspoon cider vinegar
pinch caraway seeds
salt & pepper

Peel and slice the tangerines - I like to cut them into rounds it looks pretty. Wash your bag of lettuce leaves, peel and slice the avocado and arrange all on a large serving platter.

Make up you vinaigrette by placing all the ingredients into a screw top jar, give it all a good shake to mix and then pour a little over your salad. Place the rest of the dressing to add as much or as little as you like after the salad is served.

Finish the salad with a sprinkling of cut mustard sprouts.

This salad goes especially well with a seared steak but also works with grilled pork chops or smoked mackerel fillets.
