Spicy Raisin and Oat Cookies

These cookies are really easy to make and excellent with a cup of tea - or a glass of milk - for a mid-morning break. I have been munching on them over the last week - especially when I have my 'get home from work' cup of tea.

Recipe - enough for 10-12 large cookies

50g butter
50g caster sugar
1 dessertspoon runny honey
1 heaped teaspoon cinnamon
50g Raisins
50g flour
50g porridge oats
1 egg
1 teaspoon baking powder

Pre-heat oven 180C/ Gas 4

Whisk the sugar and butter together until creamy. Beat in the cinnamon and the honey followed by the egg. Fold in the flour, baking powder, oats and raisins to form a firm dough.

Grab a large baking sheet and either grease or line with baking parchment or a silicon sheet.

Place heaped dessertspoons of cookie dough onto the sheet, spaced well apart. Cook in the oven for 10-12 minutes until golden brown.

Remove from the oven, they will still be slightly soft, so allow them to cool on the tray for five minutes before moving to a wire rack to cool completely.

These cookies will store well in an airtight container for a week or two - but if you anything like me they wont last that long!
