Creamy Leeks and Potato Pie


It's March 1st, so happy St. Davids Day. Being Welsh I had to do something to celebrate the day -
So today's recipe is all about leeks - one of our national symbols, along with the daffodil and red dragons - although neither of those will taste as good in a pie!

This dish is a brilliant warm and comforting dish. It can be served as either a main course or a side dish and can be prepared well ahead of time and frozen if need be.

recipe - enough for 4

4 large leeks
50g butter
2 tablespoons plain flour - 00 grade or fine sauce flour is the best
200ml milk
a little double cream if you wish - about a tablespoon
100g strong cheese - cheddar or Gruyere
1 teaspoon Dijon mustard
salt and pepper

300g potatoes - peeled, chopped, boiled and mashed
1 large tablespoon cream cheese
1 knob butter
salt and pepper
50g grated cheese - cheddar or Gruyere
pinch chilli flakes

Pre-heat oven to 180C/Gas 6


Chop the leeks and wash to remove any grit. Place in a heavy based pan with a knob of butter and a tablespoon of water. Cook gently, on a low heat, until the leeks are tender but not coloured.

Sprinkle on the flour and stir in well, allow to the flour to cook a little before gently pouring in the milk. Keep stirring as you slowly add the milk to produce a thick sauce.

Add the cream, grated cheese and dijon mustard. Keep stirring until the cheese has melted. Season with salt and pepper.


Pour the leek sauce into an ovenproof dish to await the topping.


In a bowl whisk together the mash potatoes, cream cheese, butter, salt and pepper until you have a light and fluffy texture.

Spoon over the leeks, sprinkle on the cheese, chilli fakes and dot with a little butter. Place into the oven for about 20-25 minutes until the cheese has melted, the top browned and all is heated through and piping hot.


Serve as a simple supper dish or as an accompaniment for a grilled chop or fish.

To add a little something extra you can add bacon, chopped cooked chicken or prawns in with the leeks. A few chopped tomatoes or red onions on top of the mash potato, before you add the cheese, looks good and taste fantastic.
