A Zingy Lime Slaw Salad


I love this slaw, it's a mouthful of fresh flavours with a bit of bite. I came up with the recipe last week, to accompany my solitary grilled pork chop - making up a big batch so I had some to use through the rest of the week. Unfortunately, it tasted so good I munch on a load whilst the chop was cooking and then had a larger than normal portion with my meal - so consequently, I only had a few tablespoons left - not really enough to save - so ate that up as well!       Mmmm best laid plans and all that!

Now, I know your thinking of all that fattening mayonnaise I must have consumed in one go - but - ha - I replaced half of it with natural yogurt and I used a low fat mayonnaise so really it wasn't so bad - rather slimming really!

Recipe - enough for 4 - (or one greedy person!)

400g or half a white cabbage
4 spring onions
1 green chilli
a large bunch of coriander
a slightly smaller bunch parsley
tub of sprouting mustard
2 cloves garlic
3 tablespoons mayonnaise - full or half fat
3 tablespoons natural yogurt
juice and zest lime or two
salt & pepper


Thinly slice your cabbage and spring onions; finely chop the chilli - de-seed if you want less heat; roughly chop the parsley and coriander - you need a large handful of each. Place all into a bowl and mix together


Whisk together the yogurt, mayonnaise and lime juice. Once you have a thick creamy consistency add the garlic, lime zest, salt and loads of freshly ground black pepper.

Pour the dressing over your cabbage mix  and combine the two.


Make sure everything gets a good coating. Tip into a serving bowl and top with the mustard sprouts.

You can happily serve this slaw as a side dish for most meals or picnics and it goes really well with pork or lamb and is especially good for a barbecue.
