Savoy Salad


Did you know savoy cabbage is packed full of health giving stuff -  not only is it full of vitamins A, B and C but it has loads of iron, calcium and magnesium as well, so it's good for all sorts of reasons and can help with muscle repair and general well being.

Cooking can destroy some of these vitamins and minerals so a winter salad made from a lovely fresh, crisp savoy it a perfect winter pick-me-up.

recipe - serves 6

half a savoy cabbage
a big handful almonds - halved.
a big handful dried sour cherries or cranberries
a big handful of grated Parmesan
3 tablespoons olive oil
1 tablespoon cider vinegar
1 tablespoon lemon juice
1 crushed clove garlic
salt and pepper

croutons to serve

Finely slice the cabbage and give it all a good wash - chopped slugs and snails are not a good dressing!

In a large bowl mix together the cabbage, sour cherries, the almond and Parmesan.

Make up the dressing by adding the olive oil, vinegar, lemon juice garlic and seasoning to a jam jar. Screw on the lid and shake to mix it all together.

Mix the dressing into the salad and sprinkle on the croutons just before serving.

If you like a little sweetness to your dressing add a teaspoon of runny honey before you shake it up together.
