Courgette Rosti



These lovely little rosti's are perfect as an accompaniment to most dishes and are perfect served with a little salad  and some warm rustic loaf at a starter or simple lunch.

I like to add a little curry powder to my mix to add a little something extra and to serve them with a little bowl of minted creme fraiche.

They are quick to make once you have allowed a couple of hours for the grated courgette to drain here's my recipe.....

Enough as a starter for 2 - makes 8 little patties

1 large courgette - grated
2 spring onions finely sliced
2 tablespoons of self raising flour or use plain flour and add half a teaspoon baking powder
1 teaspoon medium spiced curry powder
large pinch chilli flakes
an egg yolk
salt and pepper

Olive oil for cooking

a few lemon slices to serve

Minted Creme Fraiche

2 tablespoons cream fraiche
1 teaspoon mint jelly
few squeezes of lemon juice
salt and pepper


About 3 hours before you want to eat you need to prep your courgette. Simply wash and grate then transfer to a large sieve and place over a bowl. Cover with a small plate, that fits within the rim of the sieve and weigh down - a tin of beans will do the trick - leave for about 2 hours for the liquids to drip out. When your ready to make up your patties give the courgette a final squeeze with your hands to extract any lasting excess liquid.

Now place the courgette in a bowl and add all the rest of the ingredients. Give it all a thorough mixing making sure all is coated. If the mix seems a little sloppy you can add a bit more flour to help stiffen it.


Now divide the mixture into golf ball size mounds, form into a ball and then flatten to about half cm thick.


Heat up a non-stick pan with a little olive oil and add the patties. Cook for a few minutes on each side until the patties are cooked through and serve immediately with the minted creme fraiche.


To make the sauce mix together the creme fraiche, the mint sauce, a little lemon juice and season to taste.


And serve. The courgette rosti can be made ahead of time and gently heated through in the pan. Make sure you allow the outsides to re-crisp before serving.
