Turkey Quesadilla

If you still have some turkey or chicken leftover a quesadilla is a good way to use it up for lunch.

I love quesadillas - I'll add anything to them so long as there is cheese and hot chilli sauce as well - in fact I have been known to only have cheese and hot chilli sauce sometimes! However, the addition of herbs, fresh peppers etc makes them even better.

With the combination of turkey and cranberry sauce makes it really seasonal flavour especially with the fresh thyme. Once made these lasted all of three minutes before the whole lot was demolished and seconds call I suggest it was a successful flavour combination.

Recipe - serves 2

4 large plain flour wraps
2 big handfuls of turkey or chicken - thigh or breast meat
1 tablespoon cranberry sauce
handful fresh thyme - chopped
spring onions - 4 chopped
2 big handfuls of grated cheese - any hard tasty cheese will do
hot chilli sauce

Rocket or salad leaves to finish

Shred the meat into thin strips and place in a mixing bowl.

Add the cranberry sauce, the chopped spring onions and the thyme.

Mix it all well and season with a little salt and pepper

Grate up the cheese - I used some leftover cheddar along with some bits from the Christmas cheese board.

Lay out a wrap and squeeze some chilli sauce over the base - as much as you want - sprinkle on some cheese and the add half the turkey mix. Add some more cheese and then top off with a wrap.

No either lay it in a hot dry pan to toast or cut in half and place in a hot panini press. Cook on one side and when your happy that side has toasted carefully lift and turn over - obviously if your cooking in an panini press you don't have to do this.

Once it's all cooked through and the cheese has melted, lift off the pan and cut into wedges. Serve straight away whilst piping hot with some salad leaves.
