Coffee and Walnut Cakes



This is an easy store cupboard cake mix - it's my go to cake mixture when I want something a little different form a vanilla sponge but don't want to go any get any 'special' ingredients . It make a beautifully moist and rich tasting cake which goes down well for a 'little something' with a cup of tea or coffee.......

For some reason I made 2 different sizes - muffin and mini-muffin just to ring the changes.

Recipe - makes 12 muffin size cakes

6oz Soft brown sugar
6oz Butter
6oz Self Raising Flour
3 large eggs
1 large tablespoon mayonnaise
1 teaspoon vanilla
pinch salt
2oz chopped walnuts
1 teaspoon instant coffee - dissolved in a little boiling water & cooled.

Pre-heat oven 180C/ gas 4


Simply cream together the butter and sugar, slowly add the eggs. Fold in the flour and then add all the other ingredients - folding gently so you don't knock all the air out. Divide the mixture equally between cake cases and then bake in a preheated oven for 20-25 minutes until the tops are springy to the touch and a skewer comes out clean. Less cooking time for mini-muffins about 10-15 minutes.

Leave to cool and you can decorate with a cream cheese butter cream or white chocolate if you wish.

I left mine plain and simple.......
