Lemon Spiced Pork Flatbread

Hot slices of spicy lemony pork served with robust flavours of onion, garlic and olive keep the memories of eating in Greece alive for me. Today the weather outside my window is wet and very windy, I have the heating on and the fire burning so anything that can remind me of the hot sunny days of summer is very welcome.

Served wrapped in warmed flatbread, with tzatziki, it made for a really tasty, easy-eat, meal for me whilst I was decorating ........ again ...... this time it's the kitchen........

recipe - serves 2

2 large flatbreads
2 pork loin chops
juice and zest lemon
a few extra slices of lemon
clove garlic - crushed
1 teaspoon dried oregano
olive oil
salt and pepper

to serve
Slices of red onion

Pre-heat oven to 180C/Gas 4

First you need to make up your marinade. In a bowl mix together the crushed garlic, oregano, juice and zest of the lemon along with approximately 2 tablespoons olive oil. Add some salt and pepper and whisk it all together.

Rub the marinade into the pork and add the slices of lemon to the bowl. Cover and leave to marinate for at least half an hour.

Once you have given time for the pork to take on the flavours of the marinade, place the pork on an oven proof tray, scrap as much of the marinade as you can over the chops and place the lemon slices on the top. Pop in the oven and cook for about 20-25 minutes.

Whilst the chops are cooking you can prepare the flatbread.....

Simply slice the flatbread in half, and spread the cut surface with olive oil. Place on a baking tray and pop into the oven to warm through and toast slightly.

Remove from the oven and spread with the tzatiki, sliced red onion and olives (pitted) you can also add shredded lettuce and some slices of orange or yellow peppers as well if you wish.

Once your pork is cooked remove from the oven and cut into thick slices. To make it extra yummy pop the slices back on to the baking tray and mix with all the juices before placing the pork onto the prepared flatbread.

Serve immediately whilst the pork is till hot.
