Hot and Spicy Chicken Salad

I love the contrast of hot and cold - especially adding hot spicy meats to a crisp salad. This bowl of salad was a perfect supper for me last night and it looked so good I thought I'd take a few pictures and share the recipe with you.

It was just a quick salad, thrown together with a sharp salad dressing and I cooked up a marinated chicken breast to have with it.

Recipe - serves 1

1 large chicken beast
1 teaspoon smokey paprika
1 teaspoon cayenne pepper
1 clove garlic - crushed
juice of a lemon
1 small red chilli - de-seeded and small diced
olive oil
salt and pepper

Ingredients for a salad - I used a little iceberg, a small red onion and a yellow pepper. You can choose whatever you like in a salad.

First grab a sealable bag and add the paprika, cayenne, crushed clove of garlic, half the lemon juice, a little olive oil and a little salt and pepper. Give it all a good shake and add the chicken breast - shake it again to get the chicken well coated and pop it back in the fridge to marinate whilst you prepare your salad and dressing.

To make up the simple salad dressing. In a small jar add 2 tablespoons olive oil, half the lemon juice, the diced chilli, salt and pepper - pop the lid on and give it all a really good shake.

Prepare and arrange your salad in a bowl. 

When your ready to cook you chicken heat a heavy based pan or skillet and grease with a little olive oil. When hot add the chicken and fry for 8 -10 minutes on both sides until the chicken is cooked, but still succulent, and the outsides are golden and browned.

Let the chicken rest for a few minutes before cutting into thick strips. Whilst it's resting, pour the dressing over your salad and then lay the chicken on the top.

Serve straight away so your salad doesn't get hot and soggy....... this is a tasty, filling and healthy supper that's quick and easy to make.....a perfect mid week meal.
