Chocolate and Hazelnut Biscuits

These biscuits are really rich and hazel-nutty. They are perfect for dunking and full of autumn flavour.

We have a hazel tree just outside the kitchen window and over the last few days I have been watching a squirrel removing the nuts and burying them around the garden - yesterday I watched him popping a load into a pot that's full of spring bulbs - I hope he remembers them otherwise I'm going to get mini trees in with my snow drops and crocus!!

Anyway, watching the squirrel left me with hazelnuts on the brain so.......... I just had to cook something with them - therefore, dark chocolate and hazelnut biscuits were born..... This biscuit mix is really easy most of the ingredients are the same quantities and it's a throw-it-all-in-together-mix 

Recipe - make about 12-15

150g Dark Chocolate
150g Hazelnuts
150g soft brown sugar
150g plain flour
150g unsalted butter
a teaspoon vanilla
a teaspoon bicarbonate of soda
pinch of salt
an egg

Pre-heat oven to 180C/Gas 4

First roughly chop the chocolate and the hazelnuts. I break the hazelnuts up by hitting them with the flat of a cleaver - that way you get uneven pieces which makes for a more interesting mouthful.

Next weigh out all your ingredients and pop it all together into a bowl.

Now either grab a wooden spoon or start up your mixer (depends how fit and strong your feeling) and stir until all is combined and you have a lovely gooey, sticky, even mixture.

Take walnut size lumps and place on a greased baking sheet - you can use a small ice-cream scoop or a spoon - or your fingers - to divide up the mixture

Pop into the oven and cook for 8 -10 minutes - I left mine a little too long thanks to a phone call and caught the edges.......but they still tasted good!

Leave on the tray for a few minutes - when really hot these biscuits will fall apart you need to let the hot chocolate cool before moving them to a cooling rack.

Once cool you can pack them away into a tin or jar - already to dunk into a mug of tea or coffee.....

I made up a box to take to my Mum and Dad but event over took us and I never got to visit. I'd packed them up in a nice box - with a ribbon and everything.........It was such a hardship I had to eat them myself!
