Avocado Lemon Rice


I'm always looking for interesting side dishes to go with spicy Mexican style food. I love making chilli or piri piri chicken but what to have with them other than salad or boiled rice which frankly can be a bit boring!

Well, inspiration struck the other evening. I was heating up a chilli con carne and thinking about sides to go with it and then my eye landed on a bowl of avocado and I thought ahhhh ...... yes...... maybe I could mix chunks of avocado in to warmed rice, add a little lemon or lime dressing and a red onion for a bit of crunch and bite..........so I did..........and it worked really well. The clean flavours in this dish mixed really well with the spice of the chilli.

Recipe - serves 2

1 ripe but firm avocado
1 small red onion
1 lemon or lime
a large handful of baby spinach leaves
olive oil
salt and pepper
a bay leaf
4oz rice - I used basmati

Fresh Parsley or coriander to finish.


Peel and chop the avocado into bite size chunks. Squeeze over a little lemon juice and season with salt and pepper. Set aside whilst you cook the rice.


Weigh out your rice and follow the packet instructions, adding the bay leaf into the water with the dried rice.

Whilst the rice is cooking you can prepare your dressing and chop the onion. Peel and cut the red onion into thin slices, separate the layers and place to one side with the avocado.


To make the dressing simply squeeze the juice of the lemon into a jam jar, add 2 tablespoons of olive oil and season with salt and loads of black pepper. Screw the lid on and give it all a good shake.


Once cooked drain and cover with a clean dish cloth to help the rice steam and become a little fluffy.


Now you need to work quickly so your rice doesn't cool too quickly. First mix in the spinach and the dressing. Next add the onion and finally gently fold in your avocado. You may need to add a little more salt so have a little taste before finishing. Finally add chopped parsley or coriander to finish.

 If you want your rice dish hot serve immediately otherwise allow to cool and serve as a salad.
