Jacket Potatoes......


I think a jacket potato is one of the best and simple mid-week meals you can have.

It's easy, it's cheap, toppings can be as simple as grated cheese or you can go the works and have all your favourite fixings.

It can be a meal all of it's own with a salad or you can just top them with butter for a side dish......

This time of year the new main crop potatoes are in the shops so it's perfect to start baking potatoes again.

Here are a few of my favourite topping ideas.....



Salad of tomatoes with goats cheese or feta - just quarter a handful of cherry tomatoes, mix with a little olive oil, salt and basil. Chop up some feta or goats cheese and pop on the top of a buttered potato.



Baked beans - you can just open a tin and heat through or you can cook up a little bacon mix through some heated beans, add a few chilli flakes and a grate on some cheese .....


Just top with a big knob of butter, add a little salt & pepper and chop on some fresh herbs such as chives, parsley or oregano .....


Or the one thing that my stepson's used to love for supper - tuna jacket potatoes. Just open a tin of tuna, add a big tablespoon of mayonnaise, a big tablespoon natural yogurt, juice and zest of a lemon, and a mixture of chopped spring onions, celery and orange peppers. Finish with loads of black pepper.....
