A Real Greek Salad


I ate rather a lot of Greek salad last week!

And it tasted nothing like my home made version. These salads seemed more crisp and fresh - and didn't have any olives thrown on it - this may have just been the way they did it on Mykonos but we eat at a few restaurants they seemed to all serve it this way. It was really tasty so I thought I would have a go at recreating it this way at home.

Recipe Serves 4

1 block of Feta
a large handful of cherry tomatoes
half a cucumber
1 large red onion
olive oil - a really good extra virgin.
salt and pepper
1 lemon.

Grab a large bowl and start chopping - simply cut the tomatoes in half (or slice into 3 if on the larger side) cut the cucumber into small wedges, slice the red onion in half and then into thin slivers and cut the feta into bite size cubes. Pop all into the bowl and then drizzle on the olive oil. mix the oil in by hand - being gentle so you don't break up the feta. Season with salt and freshly ground pepper. Cover and leave to stand for about half an hour at room temperature so the flavours have time to warm and mingle!

Serve with lemon wedges so you can add the juice to your salad if you wish.


I missed the olives in it so I also serve ours with a bowl of kalamata olives.

If you want to make this way ahead of time it keeps quite happily in the fridge. Just bring it out about half an hour before serving.
