Tomato and Goats Cheese Salad

Our local greengrocers had a big basket of heirloom tomatoes just inside the door yesterday - so I just had to buy a few vines for my supper. I had already picked up a goats cheese and some bread planning to bake the cheese but when I decided to buy the tomatoes my meal plan changed.

I decided to prepare a warm dressing to pour over the tomatoes and then lightly mix in the goats cheese and instead of having bread with it I baked a jacket potato.....

Recipe - serves 2

2 vines of cherry tomatoes - you can uses any variety just allow a large a large handful per person
3 tablespoons olive oil
handful of basil leaves
handful flat leaf parsley
1 clove garlic
1 large firm goats cheese
balsamic vinegar
salt & pepper


pour the olive oil into a small pan and add your garlic clove - peeled and cracked with a knife but left whole - along with 3 or 4 basil leaves and place over a low heat.

This infuses the garlic and basil flavour into the oil making for a subtle garlicky taste.

Whilst the oil is heating cut your tomatoes into quarters and place in a bowl and once the oil has heated through ( give it about ten minutes) remove the garlic and basil leaves and pour over the tomatoes - set to one side.

Roughly chop you basil and parsley and add to your tomatoes along with salt and freshly ground black pepper.

Drizzle over some balsamic vinegar - probably about a teaspoon full, mix it all together cover and leave for at least an hour for the flavours to mingle.....

Just before serving chop your goats cheese into bite size cubes and place over the top of the tomato salad.

You can serve this dish as a side dish with almost any meal, it perfect as a simple lunch or supper with some crusty french bread or you can serve it on top of a buttery jacket potato.....
