A Simple Pasta Supper

I will often make up a quick and easy pasta dish for my evening meal if I'm just cooking for me. It usually has a creamy sauce and includes what ever I can find in the fridge. It always has seems to have sauteed onion of some description but all other ingredients change constantly......

last night I added bacon and mushrooms as the main ingredients and a handful of courgette ribbons I had left over.......... but honestly if all you have is some hard cheese, pasta and cream then you have the makings of a dish.....

Recipe serves 1

Pasta - whatever size shape fresh or dried - just cook to the packet instructions.
a couple of rashers of bacon
handful of mushrooms
a few spring onions
half courgette cut into ribbons
1 small tub of cream
salt and pepper

a little grated Parmesan if you wish

Cut your bacon into cubes and add to a hot pan with a little olive oil.

Once the bacon has started to sizzle add your chopped mushrooms and leave to cook for a few minutes.

Now add your chopped spring onions....

Followed by the courgette and let it cook for a few more minutes - keep the pan moving so nothing sticks and all the flavours mix.

Pour over your cream and let it bubble. Add a little salt and pepper - you may not need/want to add salt because of the salty bacon.....

Add your pasta. Give it all a good mix so all the pasta is coated in the sauce and then serve in warmed bowls.

Grate over some Parmesan and add a little salad and some fresh chopped tomato if you wish.
