Greek Style Green Beans


I'm sort of stretching it a bit with this title - honestly I have no idea if this is how the Greeks cook their green beans, I'm not sure if they serve them with feta and tomatoes or if they coat them in olive oil or even if they have green beans at all - I'm sure they do though - everyone loves green beans!

But because all the 'bits' I add to this green bean dish remind me of the Med and Greece that's what it's known as in this house - so that's what I shall call it here!

........I have a Greek friend whom I'm sure will put me straight after she's read this post!

So, about this dish, as usual it fairly easy to make and is an excellent side dish to serve with lamb but is also makes for a lovely summer lunch or supper dish - served on it's own with some french bread to help mop up the dressing.

Recipe - serves 2

1 packet of Green (french) beans - 250g packet
half block feta
A very big handful of cherry tomatoes - about half a punnet
Olive oil
Clove garlic - crushed
Juice and zest lemon
a few chilli flakes
Pinch herbs de Provence
Salt and Pepper

Pre-heat oven 180C/Gas 5

Begin by cutting the tomatoes in half and laying on a baking tray. Sprinkle with salt and the herbs and then drizzle with olive oil. Place in the oven and cook for abut 10-15 minutes until they have softened and cooked down a little.

Whilst the tomatoes are in the oven you can prepare your beans.

Top and tail them and then place in boiling water until they are tender - but with a bite - don't over cook so they become soggy! They will only take a few minutes in boiling water.

Break your feta into bite size chunks - you can slice it or crumble it - however you want....

Next you need to make your dressing - in a bowl whisk together the juice and zest of the lemon, the chilli flakes, crushed clove of garlic and about 2 tablespoons olive oil. Taste and add salt and pepper accordingly. I like loads of black pepper so I'm pretty liberal with it!

Drain your beans and return to the pan. Pour over the dressing and coat all the beans. Next tip the tomatoes in with the beans - along with any juices on the baking tray - and finally, gently fold in the feta.

Place on a warmed serving dish and serve immediately.

(if your assemble this dish to far in advance the lemon juice will discolour the beans making them a grayish green colour and not the vibrant green that you want!)
