Mini Muffins

These are little bites of yummy goodness.

I feel I have to warn you that although these muffins may look sweet and innocent they are actually rather dangerous and have the ability to tempt you into eating many, many more then your intended!
Being just one little bite size you can find yourself wandering, often, over to the cookie jar to have 'just-one-more' whilst cooking the supper - and then having to explain why there are only two muffins left! and why you can't quite finish your meal......

True story - sorry .......

With this basic recipe you can make them sweet or savoury.

Perfect for a little treat, a tea party or a picnic.

Recipe - makes 24 mini muffins

200g Self raising flour
100ml melted butter or sunflower oil
75ml milk
1 large egg

100g grated cheese (cheddar or Parmesan)
1 tablespoon freshly chopped herbs - thyme, rosemary, chives......

100g cater sugar
50g cranberries
50g chopped white chocolate

Pre-heat oven 190C / gas 5

24 mini muffin cases and mini muffin tins

Sift the flour into a bowl and add either your sugar or cheese - depending on savoury or sweet. In a jug whisk together your melted butter/oil, milk and egg. If making the savoury ones a pinch of salt can be added.

Make a well in the centre of the flour and pour in your liquid. Stir together and then add either your herbs or your cranberries and white chocolate. fold it all together and divide evenly amongst your muffin cases.

Bake in the oven for 20 minutes until risen and golden brown.

Remove from the tin and allow to cool on a wire rack.
