Feta & Spinach Spaghetti



This was the easiest spaghetti dish I have ever made!

I love pasta and I especially like spaghetti - although I never ever eat it in company - I'm just not able to work out that whole 'spining/twisting it on the fork' thing to eat it politely, so just end up piling it in and biting off the long strands hanging out of my mouth! - well there's a lovely image I've just giving you first thing on a Monday morning!!!

Anyway...... this was so quick and easy, making a perfect midweek supper and it just takes the length of time you need to boil the water and cook the spaghetti - 10 - 15 minutes tops!

Recipe - serves 2

1 bag of baby spinach leaves
1 onion - thinly sliced
1 clove garlic - crushed
1 egg - beaten
1 tablespoon grated Parmesan
a few grinds nutmeg
half a block of feta - broken into bite size cubes
salt & pepper
Large knob of butter

Enough spaghetti for 2 - cooked to the packets instructions - fresh, dried, homemade is all fine - up to you!


Pop a large pan of water on to boil for your pasta.

Then grab a heavy based frying pan and melt the butter over a gentle heat. When it's melted but not foaming, add the onions. Keep the heat on low and gently soften the onions.

Your pan should be boiling now so add your pasta.


Whilst the onions are cooking whisk up your egg and add the Parmesan, nutmeg and a little salt and pepper - set aside for when your pasta is cooked.


Once your onions have softened, but not coloured, add the garlic and swirl it around to cook it slightly.


Remove the pan from the heat and add your cooked pasta and spinach.


The heat from the pan and the pasta will wilt the spinach leaves. Once that starts to happen give it all a gentle mix to pull the onions, garlic and spinach through the spaghetti.

Now, with it all still piping hot, pour over your egg mix and let it coat all your pasta. The heat from the spaghetti will cook the egg.


Add your feta, give it all a final mix through and serve with a few twists of freshly ground black pepper and maybe a little more Parmesan.
