Roast Chicken Thighs with Lemon and Garlic


Hi I'm back!

If you stopped by to look for me yesterday I had a little altercation with my computer and either we both backed down, cooled off and went our separate ways for the day or one of us was going to sail right out of the window.........I'm stronger I would have won!!!

So, anyway, today we are both back up and running and what's more we are talking to each other so today your going to have yesterdays post because a, it tasted awesome and I wanted to share the recipe with you and b, just looking at the pictures makes me hungry even at 6:30 this morning - so I'm taking that as a good sign....

This dish is a really easy one-pot-mid-week-meal. It's packed with flavour and cooking the chicken thighs this way keeps them succulent and juicy.....

Recipe - Serves 4

8 Chicken thighs - bone left in and skin on
A lemon
4 cloves garlic
handful of fresh thyme
A glass of white wine - make it a good one that you like so you can sip whilst cooking....
Olive oil
Salt & pepper

pre-heat oven to 180C/Gas 6


Grab a large heavy based pan and add a glug of olive oil. Place your chicken thighs into the pan and season. Add another glug of oil making sure you cover the chicken. Now cut your lemon in half, squeeze the juice over the chicken and then pop the shells into the pan, follow by the garlic - leave the cloves unpeeled but give them a quick squish with a knife to break them a bit. Sprinkle on half of your thyme and pop the pan into the oven to roast for 30 minutes.

After 30 minutes remove from the oven and add your glass of wine followed by the rest of your thyme. Return the pan to the oven for a further 10 minutes to allow the juices and the wine to bubble together and the alcohol to 'burn off'.


Lift the chicken from the pan, drain off any excess oil and then spoon the winy, garlicky, lemony juices over the chicken. Serve with a green salad and some crusty bread to soak up the juices.
