Lemony Courgettes with Pasta



Whilst browsing the local veg shop the other evening, on my way home from work, I decided I wanted to eat courgettes for tea - so I bought approximately 3529 of them! well 6 actually but - and here's the key point! - it was only me for supper! however,it seemed rather sad just buying one so I pick out enough to make it look like I had a life and was about to cook for more than just me!

I know I could have popped the rest in the fridge but when I got home and started chopping I got into the swing of it and prepped them all......

So having chopped all the courgettes, I now had to decide what to do with them - so having gathered together a little cream, some pasta, a lemon and some Parmesan I was all set......

Recipe - Serves 4

6 medium courgettes
Zest of a lemon
1 green chilli - sliced and de-seeded if you wish
2 large handful baby spinach leaf
1 large handful grated Parmesan
300ml cream
2 fat cloves garlic - crushed
salt & pepper

A packet of your favourite pasta shells - the quantity you cook is up to you....


Begin by chopping your courgettes into half centimetre thick discs.


Heat some olive oil into a large pan - I used my paella pan ....


Once the oil is warm add your courgettes and cook, over a gentle heat, until the courgettes have softened and started to become opaque


Once they have softened add your garlic...


Followed by the cream ....


Lemon zest and chilli ....


and finally your Parmesan.....


Get it all bubbling over a medium heat until the cheese has melted ....


Then add loads of black pepper and a little salt.

Whilst your sauce is cooking prepare your pasta - just follow the packet instructions and cook as much as your want to serve....

Once the pasta is cooked drain and return to the pan followed by your spinach leaves....


The leaves will wilt down from the heat and moisture of the pasta...


Then add either a knob of butter, or a slug of olive oil to the pan along with a little black pepper.Gently coat the pasta and then divide into serving dishes.

Top your pasta with your courgette sauce followed by a few Parmesan shavings and serve.....
