Cucumber Lemonade


Wow, the weather has been unseasonably hot here in the UK these last few weeks and I have suddenly found myself wanting a long, thirst quenching, tasty drink to have - especially when I get home from work. I'm not one for pop's or cola's so I often opt for a glass of ice water but that is so boring - I know it's probably good for me - but - really it isn't something to look forward to - now is it?

So whilst flicking through recipe books and food magazine I came up with the idea of combining a homemade lemonade with cucumber water................... I often put sliced cucumber in a summer drink - I like the refreshing flavour it adds.

Well here it is - Cucumber lemonade - it's easy to make, tastes fantastic and is, apparently, very healthy!

Recipe makes 6-8 servings

1 cucumber
8 lemons - juiced
1 lemon sliced
4 oz sugar (white granulated)
sparkling water
ice-cubes

First cut a few slices off the cucumber for garnish later - cover them in clingfilm so they don't dry out.

Now, peel the rest of the cucumber, cut into chunks and pop in a blender. Give it all a good whizz until you have a very fine pulp.
Strain the cucumber pulp through a fine strainer. You can stir the pulp to help it along a bit and then throw away any remaining pulp and lumps. Put the juice to one side in the fridge.

Using a wooden spoon, mix the lemon juice and sugar together in a large jug, stir until all the sugar has dissolved. You could speed this up by mixing the sugar with a little boiling water to make a syrup first  - but you will have to let it cool before assembling the drink.

You can now assemble the drink. Add the cucumber water to the sweetened lemon juice - mix well, add some ice cubes, slices of lemon and cucumber and top with fizzy water. Have a little taste - if it's too sharp add a little more sugar syrup to adjust to your tastes. If you prefer a sweeter drink in general you could add tonic water instead of sparkling water - and also a little white rum or gin if you want an alcoholic kick.




Enjoy - it's great drink to serve at a barbecue or party and an excellent thirst quencher on a hot afternoon.
