Harissa Beef Skewers with a Fennel Coleslaw

I know it's not quite barbecue season just yet but I can't wait till then for a kebab or two.......I think everything tastes better when served on a skewer .... well obviously not everything....but you know what I mean - beef strips, chicken cubes, prawns, marshmallows......

........mmmmmm........marshmallows........

Anyway, back on track..... Last night I made these yummy beef strip kebabs. They were really simple so I had to take a little time preparing a sidedish to go with it - just so I'd felt like I had done some actual cooking for this meal......so I prepared a lovely white coleslaw - it's main ingredient was a fennel bulb, thinly sliced along with some firm white cabbage and a little spring onion....... here's what I did...

Recipe - serves 2

1 large sirloin steak - cut into strips
2 tablespoons harissa paste
1 tablespoon olive oil

for the coleslaw
1 fennel bulb
400g white cabbage
a couple spring onions
1 green chilli
a small handful fresh dill
a few mint leave
2 tablespoons mayonnaise
4 tablespoons natural yogurt
juice of a lemon
salt & pepper

Pop the harissa paste into a bowl, add the olive oil & mix together...

Add your strips of steak and give it all a good mix to get the harissa right into the meat, cover and set in the fridge for at least half an hour.....

Meanwhile you can prepare the coleslaw....

Grab a large serving bowl and start to finely slice your cabbage, fennel, spring onions and chilli - if you don't want too much heat leave out the seeds. Pop it all in the bowl and set aside....

In another bowl mix together your dressing - mayonnaise, yogurt, lemon juice, dill (finely chopped) salt & pepper. When all combined add to your shredded veg......

I fancied a little mint in it all as well so threw a few small whole leaves in at the end...

Cover the bowl and set aside, in the fridge, until needed....

Now back to the beef. Pre-heat your grill or griddle to high....

Remove the beef and thread each strip onto its own skewer.

Now simple place under the grill or onto a griddle and sear on both sides......simple....

Place on a plate and serve with the coleslaw, maybe a few warm pitta breads and a beer....

Have a great weekend and maybe, just maybe, barbecue season it around the corner.....
