Spicy Chicken Couscous



This is a really lovely dish to make with left over roast chicken. It's really tasty, fruity, nutty, juicy, has loads of texture and it's good for you too........so what more do you want.......

Andrew's not mad keen on couscous so this is one of my favourite go to dishes for when I'm cooking just for me. The quantities are very fluid so you can vary the flavours according to you mood of the moment!

So because of that all the quantities are in handfuls ........

My recipe.....(serves 1)

A large handful of couscous
1 teaspoon curry paste (I used a balti spice paste)
A small handful nuts - I used almonds but sometimes I use hazelnuts or both....
A few dried figs - the soft juicy ones
A large handful of Jumbo raisins
A large handful of sprouting seeds
A large handful cooked chicken
A handful of rocket
A green chilli
Juice of a lime
Salt & Pepper
Natural yogurt to serve.

First prepare your ingredients......

Pull the meat off your chicken.


I used a combination of thigh meat & breast - and I kept the pieces as large bite size and I like to tear my chicken not cut it with a knife - it seems to fit the style of the dish better......


Cut the figs up into small bite sizes and the almonds in half. If your using hazelnuts you can keep them whole......

Slice the green chilli - de-seeding if you wish, wash your salad and juice your lime.




Now to cook the couscous. In a small bowl combine the curry paste with a little boiling water.....


Pop your couscous in a mixing bowl....


Pour in your thinned curry paste .....


and then top up with more boiling water until it covers to about a cm above the couscous. Pop a plate on the bowl & leave.....


After about 5/6 minutes take the plate off and throw the raisins in on top. Put the plate back on and leave for another 10 minutes or so....


After about 10 minutes take the top off and, using a fork fluff it up a bit....


Now you can add all the other fruit, nuts, chilli and seeds. Add the lemon juice, salt & pepper. Give it all a gentle mix and then fold in your chicken and rocket leaves... this all has to be done with a gentle, light touch - if you are too heavy handed it upsets the couscous making it heavy & clumpy...


Place in a dish to serve along with some lime wedges and a good dollop of natural yogurt.....


And there you have it - spicy chicken couscous - you can adjust any of the ingredients to your own taste - I've added different dried fruits - apricots, cranberries, apples etc; I've included celery, spring onions, red onions and grated carrot; Added cooked courgette, chunks of feta or pomegranate seeds: you can substitute orange or lemon and include orange wedges in the mix - it's all very versatile!
