Pico de Gallo

I absolutely love this dish. I read about it years ago in a novel set in Mexico. The description of all the fresh flavours and vibrant colours made me want to make it straight away - and I haven't stopped making it since!

The basic dish is a salad of tomatoes, red onion, coriander leaf and loads of lime juice. I like to add avocado to mine and loads of jalapeno chilli.

After eating this salad I always feel healthy and happy - it really is a 'good mood food' - and it is an excellent accompaniment for any meat dish.....  be it chops, steaks, a bowl of chilli or even, a grilled tuna or swordfish steak.

 I often make a large bowl to go with a barbecue and it's a great dish to take to parties - if you cut the chunks a bit smaller it makes a good dip to go with nachos.

Here's my recipe......

Serves 4

6 large tomatoes - they must be ripe and at room temperature
1 red onion
1 or 2 jalapeƱo chilli either red or green or both
1 avocado - firm but ripe
2 limes
1 clove garlic - crushed
small bunch fresh coriander - as much or as little as you want, or you can substitute parsley if you prefer.
Salt & pepper

Roughly chop the tomatoes into large bite size chunks and place in a bowl -  Make sure you get all the tomato juice from the chopping board into the bowl as well.

Slice up your onion, chuck up the avocado and cut up the chilli - prepare the chilli how you want, I like mine hot so I usually leave the seeds, but it's really up to you. Add these to the bowl along with the crushed garlic and the chopped coriander.

Now squeeze in the juice of the limes and give it all a good mix. Add some salt & pepper, cover and leave to stand, in the fridge for a few hours before serving.

About 30 minutes before serving, remove from the fridge to allow the flavours to develop - cold tomatoes taste of nothing! - and adjust the seasoning if needed - I find this dish sometimes needs extra salt.
