Red Pepper Pizza




I really, really, really wanted pizza on Saturday night ( are you getting how much I wanted pizza?)

I think it was a reaction to all the roasts and rich foods I've been cooking and eating over the holidays - I just wanted to curl up on the sofa, with a movie on, a bottle of beer and eat slices of simple homemade pizza with my fingers!

So that's what we did and here's the pizza we ate......


It was a very tasty and simple pizza - all fresh Mediterranean flavours - miles away from all the rich meat sauces, pies, roasts and casseroles I feel like we have been eating forever! We also had a big bowl of marinated olives to tuck into whilst the pizza was cooking - I think my body is trying to tell me that it needs to go to the Med for a few weeks........Mmmmm sunshine that's what I need!

Anyway, back to the pizza......

It's very easy to make....

First make a batch of pizza dough.  Make the dough at least an hour before you need it so it has time to rise and be knocked back before you want it.

Other ingredients 

a red Romano peppers
2 tablespoons pesto
2 tablespoons tomato paste
1 ball mozzarella
a handful rocket leaves
a handful olives - stoned
a handful of pine nuts
sea salt
Olive oil

some polenta for the pizza tray

preheat oven to 240C / gas 8

Whilst your pizza dough is rising you need to prepare your peppers



I find that peppers can be a bit under cooked on a pizza and the sourness of an 'underdone' pepper can detract from a meal - so I like to start them off on the griddle first. It's very easy to do just heat your griddle until hot and then pop your pepper on to - nothing else required - leave the pepper to just start to catch with black lines appearing on the skin - rotate it until all sides are done.

You can achieve a similar result under the grill - but you wont get the stripes - and must keep any eye on it! or you can just get one big black blister all over the skin of the pepper! not pretty......

Once your peppers are done leave to cool and then slice in half lengthwise. Remove the seeds and stringy veins then set aside whilst you prepare the pizza base....


Roll out your dough and lay it on a baking tray or pizza stone - sprinkle some polenta on the tray first to stop it sticking....


Spread over your pesto and tomato paste.....

Lay your pepper on the pizza......


now tear your mozzarella ball into strips and place around the peppers, sprinkle over the sea salt and then bake for about 15 to 20 minutes until the dough in the middle is done and the edges have started to brown...



Remove from the oven and sprinkle over your rocket, olives and pine nuts. Drizzle on a good slick of olive oil and your ready to serve.....
