Pesto Chicken Sandwich



I promised my Mum ages ago that I would come up with some sandwich ideas for her. She said she was getting board making the usual cheese & pickle and ......then I forgot........sorry Mummy!

So I'm hoping this sandwich will make up for my remiss.......It's pretty damn yummy ( can I get away with yummy? ...............is it a bit cliche on a recipe blog?) Anyway it was very satisfying with all that grilled cheese and it's filling as well.....

This sandwich wasn't planned at all.....I got home from work the other evening, I was home alone that night, but still wanted to cook myself something tasty but it had to be easy. A quick look in the fridge/freezer resulted in some chicken breasts, some ciabatta rolls, salad, pesto & mozzarella cheese........so - oh yes - there and then - the cheesy, pesto, chicken sandwich was born.....

Here's what I did.....

Recipe - serves 1

1 chicken breast
2 tablespoons pesto
1 ball mozzarella
1 ciabatta roll
some spring onions (I used 3)
handful rocket
some cherry tomatoes
1 tablespoon mayonnaise
salt & pepper



First get you chicken breast and cut it into 3  - lengthwise not widthwise you want long strips.....


Lay each piece between some clingfilm


And then give it a good thwack with a rolling pin....


This is to batten them out to allow them to cook quickly under the grill and also it makes eating them easier.....

Pre heat your grill to high and pop the chicken pieces under for a few minutes, just to seal what will become the bottom. Now turn them over and spread on your pesto, top with mozzarella, give a few grinds of pepper and a sprinkle of salt....


And pop them back under the grill for probably about 5-6 minutes - depends on how hot your grill is - just make sure the chicken is cooked through and the cheese has melted and started to brown...

Whilst the chicken was cooking I cut the ciabatta in half and toasted the cut side on a hot dry griddle


and throw the spring onions on the griddle as well - to colour and wilt them....keep the gridle dry - don't add oil.....


you want them to look like this - al dente and charred


When the ciabatta is toasted, spread the mayonnaise on one side and having cut the tomatoes in half, squish them onto the other side - getting all those lovely tomato juices into the bread.....


Lay the rocket on top of the tomatoes and then place the cooked cheesy chicken on top - so yummy! My mouth is watering writing this up - I'm just remembering all the lovely flavours and smells!


Lay on your spring onions.......


Pop the top on.......

Cut in half and eat........... FYI a Budweiser or two goes particularly well with this.........
