Mac & Cheese - Fancied up a bit!

This is my go to comfort food.....

....... honestly is there anything more comforting than curling up in front of the fire,with your thickest most warmest, socks on, and a big bowl of hot macaroni with loads of melted cheese.......

I think I can safely say, that if it wasn't for the fact that my hips would grow to the size of a hippo, I could live on this dish for ever!

But these days I'm not content with a simple mac & cheese dish, I have to add bits to it - such as bacon , or spinach, or tomatoes, or chilli's, or peppers, or cooked chicken..........or....... in fact I've probably added most things and occasionally I've definitely added all of the above at once.......

So anyway, last week I made it - yet again - and took a few snaps before I just had to put the camera down and dig in.....

Here's my recipe - it's very quick.....

Serves 4

250g macaroni
1 pint of white sauce
2oz grated cheddar
1oz grated mozzarella
1 teaspoon English mustard powder
handful of baby spinach leaves
handful of sun blush tomatoes
3oz lardons - smoked
1 red chilli - cut into rings - deseeded if you don't want the extra heat

Loads of extra cheddar grated for the top - with maybe a little grated Parmesan as well.....

First off set you macaroni cooking in boiling water - follow the packet instruction. Whilst that's cooking make up your white sauce (- I've written about this loads of time, so just follow the link)

Once you have your white sauce made, add the grated cheddar and mozzarella, along with the mustard powder and a little seasoning to taste. Give it all a mix to melt the cheese and set aside.

Now fry up your lardons until crispy - you can get these cooking whilst your making your white sauce...... but don't forget about them......

Once your macaroni is done, drain from the water and pop back into the hot pan. Add your cheesy white sauce, along with the lardons and spinach and give it all a good quick mix. Pop it into an oven proof serving dish and arrange your tomatoes and chillis on top. Sprinkle over your cheddar and parmesan topping and pop under a pre-heated grill to brown. I like to make sure the cheese has browned really well and, for me, a good mac & cheese should still be bubbling when I sit down to eat it!!!

So that's my go to comfort meal and I always sleep well after I had this for supper!
