Lime Marinated Steak Supper

Due to a number of reasons I'm working from home today - so when the alarm went off I was able to stretch, relax and not have to immediately jump up and start my day.......... but then I thought of all the things I could do with the time I would usually use to get ready for work........

First, I indulged myself with half an hour of Yoga .....

.....So now filled with all that 'positive energy'! - I decided to wash the kitchen floor - yes that's right! - for all those who know me, well that's a fairly unusual thing to find me doing! I wouldn't say it was dirty but I wouldn't eat my dinner off it!

Then, whilst the floor was drying, I tackled the bathroom followed by folded the laundry - I still hadn't used up all that spare time so I quickly ran the hoover around the carpets and brushed the stairs!

Now it's time to start my working day but boy am I tired!      Yawn.......

I might just need a quick nap at lunch time - in hindsight I think it's easier to go to the office to work - even if I do have to wear smart clothes and do my hair - it's a hell of a lot easier than working from home!!

So whilst I get my energy levels back, and sip a cup of tea, I thought I'd tell you about my supper last night. 

I really fancied some steak and salad, but wanted to add a bit of a zingy flavour to it.

When I got home from work I quick made a marinade and left the steak in it for a few hours before cooking. It was really fantastic - not to over powering but added a good uplifting flavour and with a peppery watercress salad I was very happy.....

Here's what I did.....

Recipe - this is for one but obviously easy to multiply the quantities to cover as many as you wish!

1 rump steak - any size
1 lime
1 green chilli
2 cloves garlic
1 teaspoon dark soy sauce
sea salt & freshly ground pepper

salad leaves of your choice - I used watercress

First get out a small mixer or hand blender and add your marinade ingredients - soy sauce, lime juice, garlic cloves and the whole chilli - obviously stalk removed and if you don't want it too hot remove the seeds as well - I left mine in I live hot & spicy!....... also a few grinds of black pepper.

Whizz it all up until you get a course mix - you don't need to blend until it's pureed - rough chopped is fine - there's nothing to stop you chopping by hand it's just easier with a blender and quicker....

 Pour the marinade over the steak cover, pop in the fridge and leave to marinade for as long as you like - I would say minimum an hour and unto over night if your really organised!

Bring the steak out of the fridge to come back to room temperature before cooking.

I cooked mine on a cast iron griddle but you can cook it under the grill. Whichever way you choose  to cook your steak make sure its an a really high heat and let the meat rest after cooking so it's relaxed and tender when served.

To serve slice the beef, against the grain, sprinkle with a little salt & freshly ground pepper - if so desired - then throw (sorry I mean place) some salad leaves and a couple of lime wedges along with the steak on a serving platter.


You could always serve chips with it or a little rosti potato or may be some garlic bread........... I'll leave that bit up to you
